Beef brisket

Our briskets are seasoned with a ‘rub' of various spices and herbs and smoked.
This baby takes 12 - 16 hours in our pit to bring you a product that can only be done this way.


Good ol' Texas Brisket

“Texans are crazy about barbeque…”
This brisket is kept easy with a touch of seasoning and handful of smoke.


Oklahoma Smoked Brisket

This one has a complex rub and is mopped with one of our sauces while being smoked in our pit.


  Beef Tri Tip

This cut started as a “west coast thing” and is now becoming more and more popular. We keep the seasoning simple here and prefer to serve this one medium.


BBQ pulled pork shoulder 

Kept in our pit until it can be pulled apart by hand or your fork. This is an all time favorite!
Piled high on your plate or on a soft potato bun, drizzled with one of Roo's homemade sauces and topped with a crisp and tangy slaw. Now, this will take you south!


 
North Carolina Pulled Pork

North Carolina style is served with a tangy slaw and a slightly sweet tomato-based barbecue sauce.
The combination speaks for itself.


South Carolina Pulled Pork

When you come down here, things change a bit from the north.
Traditionally, your sauce here is made with a mustard base.
Another winning combination with a flair of flavor.


Memphis Style BBQ Pork

Pit roasted until fork tender, hand pulled and served with a local Tennessee slaw, gives this choice balance and character.

We suggest this one with your pulled pork sandwiches.

 

Toasted Sesame Cabbage Slaw

Honey-Dijon Slaw

Red and green cabbage tossed with a honey-Dijon dressing
that is rounded out with a squeeze of fresh lime.

Roo's Barbequed Beans
